I have set up several websites in the last month but they're not being indexed even though search engine bots are accessing my sites almost every day. The sites have plenty of content (average 80 pages a site) and new content is added daily, my meta tags, robot.txt, etc. ,are all correct.How long should it take for a site to be indexed once it's being visited by the bots?

One of the factors that help your website get quickly indexed by google is the number of(  PR 2 or above ranked) sites that are linking to your website.

With my two most recent sites, it took just a couple days. The best way to get it indexed is to get some other websites to link to yours. If you have other websites that are well-indexed, put some links on them to your new websites to help. You can also submit to some free directories to speed the process along. Or if you have any great original content, you could Digg it and that will help get traffic and your site indexed quickly.
